The Lotus Cake

Meet the newest addition to The Cakeroom Bakery family – the oh-so-divine Lotus Cake! This Belgian specialty was traditionally made for consumption on or just before St. Nicholas Day, but is now a common staple in Europe served with breakfast or a cup of tea.  The Biscoff spread, also called Cookie Butter, is made from the Biscoff Cookies.   Our Lotus Cake is made of these crunchy spiced shortcrust biscuits or cookies which are refined into a spread, then folded into the buttercream and melted into a glaze that is spread across each layer and drizzled over the top and sides. You can enjoy this with our vanilla cake or our chocolate cake for that extra decadent richness!
